Once upon a time … I had a restaurant where one of the main items on the menu were salads. Perhaps this is why the preparation of salads for me is a piece of cake: mentally I mix all the ingredients, add some seasoning and know exactly what taste should I get. And every time I cook salad, it is different, so if I write all the recipes it would be not enough space in program memory ?. Although sometimes, if I don’t forget it and have the time I rapidly scribble on a piece of paper, what I added to the salad. And the most important ingredient in any salad is a sauce. Today’s rucola salad’s dressing is just like that – simple and is suitable to all of “green” salads.

Salad with arugula and apple

Ingredients:

• arugula (rucola, rocket)
• 1 apple
• 50 g blue cheese
• 1/3 cup of hazelnuts
• 2-3 tbsp olive oil
• 1 tbsp balsamic vinegar
• 1 tsp maple syrup
• salt

Instructions:

1. For the sauce, whisk oil with balsamic vinegar, salt and maple syrup.
2. Wash and dry the arugula. Put on a plate for feeding. Top with cheese crumbled by hands, put the apple, cut into thin slices.
3. Sprinkle with nuts and pour the sauce.
