My close acquaintance with quinoa happened a few years ago. I really liked the very kind of grains when they are cooked. Of course, this can only be my imagination, but for me they become like small shells of snails. Although the taste of quinoa for me personally is not particularly pronounced, it is possible to prepare excellent dishes from it, adding various products.
Quinoa salad with roasted cashew nuts
What we need:
- 1 cup boiled quinoa
- 1 avocado
- 200 grams of anari cheese (white young type cheese)
- 100 grams of dried tomatoes in oil
- 2-3 tablespoons cashew nuts
- 2 tbsp soy sauce tsuyu
- olive oil
- coarse salt
What to do:
- Cut avocado in half, remove the stone, peel and cut the avocado into cubes.
- Cut cheese is also into cubes. Chop dried tomatoes finely.
Put the nuts on a dry baking sheet and bake in the oven at 200C until golden brown.
- To make a salad mix quinoa, dried tomatoes, avocado and cheese. Stir and season with olive oil, soy sauce, salt and add nuts.
- P.S. You can prepare the salad in advance (without refueling with butter, sauce and nuts) and store in the refrigerator for up to 2 days.
