I have tried so many recipes and combinations to made pancakes and crêpes, when finally developed my own one, preferred by my kids. Because it’s our kids who are the biggest consumers of this dish. Denis and Nikita love eating crêpes with pure sugar (with big crystals, when it crunches on the teeth) or with strawberry jam. They are really conservative and stable in their taste. We, adults, love eating crêpes for breakfast filled with cheese, veggies and eggs. There are many other dishes where I use crêpes as well. 1. Whisk eggs, sugar, vanilla sugar and salt together in a big bowl. Then add milk and water and whisk again. Mixing constantly add the flour and whisk until smooth consistency and no clamps. Pour vegetable oil at the end and whisk again.
2. Warm the big flat pan on medium heat, brush it with vegetable oil and pour 3-4 tbsp crepes’ batter on the pan. Then using a special wooden stick for crepes, smear the batter on the pan untill all surface is covered.
3. Fry from both sides 30-40 seconds. Repeat until all batter is used.
