Summer is coming in Dubai – and this is the main reason of my new ideas for light and fresh breakfasts. Today I’ve served for my husband and mother-in-law delicious vegetable rolls.
In general, to make a tasty roll, you need to remember the rule of SSC (combining different textures):
* Ajvar – pepper-based condiment made from char-grilled red bell pepper and oil. One of my favorite base for lactose-free sandwiches.
* Labneh – soft, cream cheese made from strained yogurt, that’s popular in Middle Eastern cuisine. As a substitute use any cream cheese you like or can find in your shop.
* Cheese (gouda)
* Cucumber, sliced
* Sun-dried tomatoes in oil, sliced
* Parsley
* Lettuce
* Oat tortillas (I used the one from shop, but you can easily make it at home: all you need is 2 cups oat flour, 1/2 cup water, 1/2 tsp salt – mix, knead, rest 10 min, roll and pan fry)
For myself I’ve made gluten-free option, adding avocado instead labneh and cheese.
