Sometimes it seems like you can’t create smth simple and tasty. After all, everything has been tried and cooked for a long time! There are so many chefs in the world, so many amateurs, tons of recipes, etc. However, nothing is impossible. And here is an example – tomato muffins! Try it, you won’t regret it!
Tomatoes are one of the best plant-based sources of umami flavor. It comes from their high glutamic acid content.

Umami is one of the five basic tastes and is best described as a savory or “meaty” flavor.
The taste comes from the presence of the amino acid glutamate — or glutamic acid — or the compounds inosinate or guanylate, which are typically present in high-protein foods.
✅ Regular tomatoes contain 150–250 mg of glutamic acid per 3.5 ounces (100 grams), while cherry tomatoes provide 170–280 mg in the same serving.✅
Tomato muffins

Ingredients (6 muffins):
- 3 tomatoes, chopped without skin and seeds
- 1 1/2 cups wholegrain spelt flour
- 1/3 cup vegetable oil
- 1 egg
- 1/2 tsp vanilla sugar
- 1/2 tsp baking soda
- 1/8 teaspoon nutmeg
- 1/4 teaspoon ground cinnamon
- 1/2 cup walnuts, sesame seeds, and almonds (toasted)
- 1 tbsp of coconut flakes for sprinkling
- Salt
Cooking method:
- Whisk the egg and salt, gradually adding the oil, tomatoes and vanilla sugar.
- Pour in a mixture of flour with soda, nuts, spices, knead the dough.
- Place the dough into oiled muffin tins and sprinkled with coconut. Bake for about 25-30 minutes at 190 C.
- Cool the prepared muffins and serve with sour cream and tomatoes. Ideal for a snack.
