What can be better than homemade cookies. More over – the cookies made from homemade cottage cheese! Yes, you are right. Making own cheese is one of the less popular thing in our days. However being 100% cooking lover and crazy recipe developer I can’t resist from eating still warm freshly made cottage cheese directly from my linen bag. By the way this linen textile was made by my grandmother from scratch and stitched by my mom. I think I have to write separate post about it.
But today I want to share very simple and tasty recipe of cottage cheese cookies. The dough is the easiest part. All you need is 5 ingredients: cottage cheese, butter, flour, eggs and water.
You can use store-bought white cheese or homemade as I did. The taste will be amazing anyway. In this recipe you don’t need to loose time for waiting when the butter becomes soft. Just use a shredder. Keep in mind NOT to add SUGAR in the dough.
The process of making the cookies is not difficult at all as it may look like. I didn’t count how many cookies I’ve made from this quantity of the dough, but believe me – never too much! Once you make the first batch of them and put to the oven, you make another. So when the first is baked, you don’t loose the time and fill the baking sheet with the second batch of these little deliciousness.
Don’t worry if some of the sugar suddenly leaks out of the cookies and turns into caramel. Place the cookies as in the photo, then the melted sugar will not fall on the neighboring rose, but will only remain on the baking paper.
I use a new sheet of baking paper for each batch, otherwise the leaked sugar will burn.
Bake cottage cheese roses not too long. Depending on the thickness of the rolled dough and from the oven, approx. 5-7 minutes, until golden brown.
Once the cookies are baked they remain soft inside and crispy outside. It is difficult to stop yourself not to eat all at once. Not too sweet, not too crunchy, just as they should be! These little flowers are so so so good!
Really worth to try!
1. All ingredients, except sugar, mix and knead the dough. Roll out into a thin layer, approx 3 mm thick.
2. Cut out the circles with a glass (diameter approx. 6 cm).
3. Dip one side in sugar and press firmly with your hand so that the sugar sticks.
4. Fold the cake in half, and again in half. Blind a corner with your right hand, and unfold the petals with your left.
5. Place on a greased baking sheet with vegetable oil. Bake in the oven for 5-7 minutes at 200 C.
