New Year! This is a special holiday for me. And every time I, like a little girl, wait for gifts under the Christmas tree from Santa Claus. After all, faith works miracles. The more we believe in something, the faster our desire will come true.
When I’m in such a festive mood, I take great pleasure in cooking day and night and feeding an entire army. I would like to create something to match this fabulous night. Hence the apple salad. Why not?!
Meat salad with apples
(for 4 portion)
– 2 large red apples
– 350 g meat tenderloin (pork or beef)
– 150 g boiled smoked brisket or bacon
– 1 onion
– 1 carrot
– 100 g sour cream
– 2 small pickled cucumbers
– 1 tbsp green dill
– 50 ml vegetable oil for frying
Cut the onion and carrots into medium cubes and fry in vegetable oil.
Wash the tenderloin, dry it with a paper towel, remove membranes and cut across the grain into 1 cm cubes.
Transfer vegetables to a separate bowl.
In the same pan, fry the meat for 2-3 minutes. Add sour cream to the meat, heat through without letting it boil and curdle, just thicken a little. If desired, you can add 1 teaspoon of flour. Season with salt and pepper.
Cut the brisket into 1 cm cubes. Finely chop the gherkins and dill. Core the apples and scoop out some of the pulp, adding it to the filling. Mix vegetables, meat, brisket.
Stuff the apples with the mixture.
Bake in a preheated oven at 180 C for 20-25 minutes.
