Chicory is one of the products that I have always bypassed in the shop. This time I decided to give myself a chance to create something eatable from it. As you know the taste of chicory is very specific and bitter. To reduce bitterness I put chicory in a sweetened water for few hours. It worked! The taste was really good. The rest was just the work of my imagination and what I had in the fridge. This is the way how appeared surimi and chicory salad. You will be surprised how it is delicious. Surimi and chicory work very well together. And the sauce adds a good pinch of taste to surimi and chicory salad.


Surimi and chicory salad


Ingredients:

  • 3 chicory
  • 2 tbsp sugar
  • 250 g surimi, sliced
  • 2 tbsp sunflower seeds
  • 3-4 tsp capers
  • 1 tsp marinated green pepper
  • 4 tbsp crashed walnuts
  • 1 tbsp dried cranberries, sliced

Sauce:

  • 3 tbsp mayo
  • 3 tbsp plain yogurt
  • 1 tbsp ketchup (heinz)
  • 1/2 tsp curry
  • Salt

Cooking method:

  1. Split all chicory leaves, wash them and dry. Than cut them on big chunks and put in a sweetened water for 2 hours. Drain it and dry.
  2. Cut surimi on a big slices. Fry sunflower seeds on a dry frying pot till golden.
  3. For sauce mix mayo, yogurt, ketchup, curry and salt.
  4. Mix all ingredients together in a big salad bowl and pour with the sauce.
