One of the main idea of sustainable kitchen is not to waste food. This means that the food should be planed in a way that allows avoid throwing it. Using left-overs for preparing new dishes is a very common practice in restaurants and many homes. Our home is no exception. I use left-overs in my recipes very often. Today’s example is arancini – famous Italian dish made of left-over rice, cheese and tomato sauce, mainly deep fried but also can be baked.
