These delicious minis are soft and tender. Egg-free recipe with whole grain flour is a healthy option for a snack in a lunch-box of your kids or as something sweet for a tea-time for all family.
Cottage cheese minis with raisins
Ingredients:
- 1/3 cup whole grain wheat flour
- 100 g cottage cheese
- 1 tbsp brown sugar
- A pinch of salt
- 50 ml vegetable oil
- 1 tsp baking powder
- Vanilla sugar or essence
- 2 tbsp raisins
For sprinkling:
- 1 tbsp brown sugar
- 1/4 tsp cinnamon
Cooking method:
- Pre-heat the oven to 180C. Lay the baking tray by a parchment paper.
- Mash the cottage cheese with a fork. Add flour, raisins, sugar, salt, baking powder and vanilla. Mix well by a spoon. Then pour in the vegetable oil and use the hands to bring the dough together in the bowl.
- In a flat plate mix sugar and cinnamon for sprinkling.
- Form the small balls and dip each ball from one side into the sprinkling. Put the cookies on the prepared baking tray and bake in the oven for about 10-15 minutes in the temperature 180C.
