I simply love cooking this dish! Especially when I am tired from the monotony of regular spaghetti dishes.
It is called Frittelle di Spaghetti
One day sitting in the Queen Elizabeth 2 library, I found a culinary book and started leafing over the pages. One picture got my eye.
That was fried swirly spaghetti! I should say that that time I was struggling with some new recipes for our kids’ lunch boxes, where the issue was that the dish should taste good when it is cold! I didn’t save the recipe from that book, but the photo stayed in my memory.
So one day, while doing regular check up of my pantry, I found some spaghetti, that I bought but nobody wanted to eat them, as they were from quinoa & other stuffs. Then I reminded this interesting picture and decided to made the same at home.
I cooked the spaghetti, and bend them with the eggs, chopped garlic and freshly grated Parmesan cheese.
And the magic happened! Our kids LOVE these funny swirly fritters.
The most wonderful thing is that every time its taste can be changed by adding 2-3 new ingredients.
🌿 Now, how can this basic recipe be modified:
✔️ use unconventional spaghetti made from lentils, rice, with the addition of vegetables, etc.
✔️ add bacon, chicken or ham, finely chopped and pre-fried (with onions)
✔️ enrich the taste with various finely chopped vegetables (carrots, peppers, zucchini)
✔️Add a variety of spices, seasonings and herbs. Smoked paprika, Provencal spices, thyme, oregano, and parsley from greens are especially suitable here!
Nowadays I cook this dish quite often, adding different ingredients, and not only for lunch-boxes, but as dinner or snack. Frittelle di spaghetti are always delicious, even when cold. And every time there is not any left-overs.
Here is the most basic form of spaghetti fritters.
1. Beat eggs, add garlic and parmesan.
2. Cook the spaghetti, drain and let cool slightly.
3. Then transfer to the egg mixture and mix well.
4. Pour 1 tbsp of vegetable oil in a frying pan and place on the heat. Then using a fork or by hand, add piles of the spaghetti mixture to the pan.
5. Fry the fritters in a slightly hotter pan from both sides until golden brown and crispy outside.
