I really love quinoa, especially the color one. It is not only beautiful, but also very tasty. Even the kids became fans of quinoa.

Quinoa is a flowering plant in the amaranth family, which seeds (exactly what we eat) are rich in protein, dietary fiber, B vitamins, and dietary minerals in amount greater than in many grains.

Every time I am cooking something from it, in the process of cooking it a new idea comes to me and the planned dish changes radically. So it happened with this appetizer. Although I don’t even know if this dish can be called an appetizer.

Quinoa bites


Ingredients:

– 1/2 cup dry quinoa
– 1 egg
– 1 apple
– 1 tsp butter
– 1 carrot
– 50 ml of milk
– 50 ml of water
– 1/3 cup brown sugar
– 1/2 tsp cinnamon
– 2 tablespoons of vanilla crackers
– a pinch of salt


Cooking method:

  1. Pour boiling water over the quinoa 3 fingers above the level of the cereal in the saucepan.
  2. Bring to a boil, reduce heat slightly and cook until all the water has evaporated and the porridge is crumbly.
  3. At this time, peel the apple, cut into pieces and steam. Then use a blender to make puree from the apple.
  4. Peel the carrots, grate. Melt some butter in a frying pan, add carrots, pour 50 ml of water and add sugar. When the liquid is halved, add milk. Cook until all the liquid has evaporated and the carrots smell like milk caramel.
  5. Add applesauce, sweet carrots, egg, crackers, cinnamon and a pinch of salt to boiled quinoa. Grease a baking dish with vegetable oil, lay out the mass and bake at a temperature of 190 C for about 20-25 minutes or until crispy outside.
