I really love Japanese food. And I am happy that my family support me in this. My sons love sushi rice balls I cook few times per week for lunch-boxes. They love all type of Japanese noodles with dark and flavor sauces. The only thing is that my sons do not like veggies that normally comes with noodles (especially any type of beans and greens). So I start cooking noodles in my own way – with spinach🥣.


Japanese noodles with egg and spinach


Ingredients:

  • 1 package Japanese noodles
  • 1/3 cup frozen spinach
  • 1 egg
  • 1 tbsp spring onions

Sauce:

  • 1 tsp sesame oil
  • 1 tbsp oyster sauce
  • 1 tsp soy sauce
  • 1 tsp honey
  • 1 tbsp mirin or sushi seasoning

Cooking method:

  1. For sauce mix all ingredients as above and whisk with a fork.
  2. Fry noodles on a frying pan adding 1-2 tbsp of sauce.
  3. Cook frozen spinach in the pan with covered lid until defrost, add 2 tbsp sauce and bring it to boil. Then add an egg and make it scrambled by spoon. Pour more sauce if needed. Add noodles and mix well.
  4. Serve with spring onions.
