For all CHEESE fans!
To be honest, it is the best tart I’ve ever eaten! Not that I praised myself, but this recipe turned out to be a glory! A tart with caramelized apples and various kinds of cheeses is a water-mouthing dish! And don’t look that the recipe is a bit long – it’s still easy to cook. I described in details, step by step, the preparation of the dough, the filling and the baking itself, so that there was not room for any mistakes during cooking.
The dough can be made in a double volume, use one half, and the second – freeze to max. 2 months.
Use cheeses sharp to taste. Personally, I prefer Gorgonzola cheese and Parmesan for sprinkling. For dough I like to use hard cheeses, such as Asiago or semi-hard, like Comte.
For base:
For stuffing:
1. For the base mix flour, butter and salt in a blender just few seconds. Then add cheese and water and mix until all ingredients will combine, but still pieces of cheese and butter remain. Put the mass on a big cutting board. By rapid movements gather it into a ball and roll in a pancake with a diameter of 10 cm. Do it fast and don’t overwork the dough. Wrap pancake in plastic wrap and put in a fridge for 1 hour.
2. Fruit stuffing: mix finely sliced apples with raisins, sugar, flour, lemon juice and spices. Leave in room temperature.
3. Preheat the oven till 200C. Take out the dough from the fridge and leave for 15 minutes to rest in a room temperature.
4. Roll out the dough into a circle, using two pieces of baking paper.
5. Put it in the baking form for tarts and press the edges.
6. Pricked with a fork, lay a baking paper and pour on top of the peas or beans (for the press).
7. Bake for approx. 15-20 minutes. Then, remove the form from the oven, remove the paper and beans, brush the dough with beaten egg and again return to the oven for 2-3 minutes.
8. On such prepared tart base put the fruit stuffing.
9. Bake in the oven at 180 ° C approx. 35-40 minutes or until the apples caramelized.
10. Then remove from the oven, sprinkle with cheese on the top and put it back in the oven for cheese melting (for about 5-7 minutes). Serve hot or cold: both options are water-mouthing.
