After amazing holidays in my parents house in Belarus and house of my parents-in-law in Poland it is time to come back to my own kitchen. I really missed my island of invention!
As our back flight was from Poland, we bought in Warsaw airport some traditional meat products, incl. sausages, without any conservatives, which are really delicious and aromatic! So I baked a pancake with some smoked sausages and kale. In this recipe you can use any type of meat or sausages you like. It still will be good!
Baked pancake with kale and sausages

Ingredients:
For filling:
- 1 big onion
- 5-6 kale leaves
- 6 thin sausages (300 g, any type from any preferred meat)
- 2-3 tbsp rapeseed oil
- 1 tsp butter
- a pinch of salt
For batter:
- 3 eggs
- 1 cup (200 ml) full fat milk
- 1 and 1/4 cup flour
- 2/3 cup grated cheddar cheese
- 1,5 tsp ground nutmeg
- Salt and pepper
Cooking method:
- Preheat an oven till 200 C.
- Cut onion in small cubes and fry them in the oil with butter in a frying pan with a pinch of salt till translucent. Wash kale and cut in chunks. Put all in a baking form.
- For batter in a bowl mix egg, milk, flour, cheese, nutmeg, salt and pepper. It should be a little bit thicker than for pancakes. Pour the batter on the veggies with sausages and bake for 25 minutes. Serve hot.
