I don’t know why it happens every time, but when I buy only 2 bananas – the kids are upsets that it is not enough.

At the same time when I buy a bunch of bananas (around 4-5 bananas in a bunch), then ALWAYS two bananas are left and nobody wants to eat them. As I was taught from my childhood NOT to waste any food, I can’t throw them away. So nothing is left as only use these bananas in baking.

I have tried so many different recipes of banana bread, muffins or cookies, as well as the one from bakeries and cafes. And personally I liked most of them. However our kids didn’t want even try any. They didn’t like the smell, or how it looked, or what what the texture, or simply the color.
After a lot of efforts in finding the solution, finally I got a recipe which was that one! All members of our family couldn’t stop themself from eating My Banana Cheesecake all at once.

As most of banana cakes, mine contains all similar ingredients with some extra ones: sweetened yogurt in the dough, which gives amazing aroma, and cream cheese filling. Thanks to this filling – the cake has the perfect flavor and texture’s balance, not to dry, not to moisty, just the PERFECT.

Banana Cheesecake

Ingredients:

Dough:

  • 2 bananas
  • 1 egg
  • 70 g brown sugar
  • 30 g granulated white sugar
  • 110 g butter, melted
  • 1 tsp vanilla extract
  • 60 ml sweetened yogurt (preferably, banana or apricot)
  • 125 g flour
  • 1 tsp baking soda
  • Salt

Cream cheese filling:

  • 110 g Philadelphia cheese
  • 1 egg
  • 50 g granulated white sugar
  • 3 tbsp flour

Cooking method:

  1. Pre-heat the oven till 180C.
  2. Put the bananas in a big bowl and mash them by fork.
  3. Add the egg, the brown and white sugar, the melted butter, vanilla extract, the yogurt and whisk the batter well.
  4. Add the flour, the baking soda and a pinch of salt. Mix well until the smooth consistency.
  5. To make the cheesecake filling, mix Philadelphia cheese, egg, white sugar and flour till the smooth consistency.
  6. For baking use the baking loaf tin (25 cm long). Cover it with greased baking paper and pour in the half of banana batter. Then top it with the layer of cream cheese filling and cover with the rest of banana batter.
  7. Bake in the oven for about 45-50 minutes in the temperature of 180C.
  8. Once the cake is ready, remove it from the oven and let it rest for about 10 minutes. Then take it out of the tin and serve warm or cold, according to your taste preferences.
