Almond-Pear Tart


Ingredients:

Preparation time: 35 min + 20 min for cooling
Cooking time: 40 min 
Servings: 4-6

Dough:

  • 1 & 1/4 cup wheat flour
  • 1/4 cup white sugar
  • 90 g butter, chilled and chopped
  • 1 egg yolk, lightly beaten
  • 3 tbsp cold water

Filling:

  • 2 large pears
  • 50 g butter
  • 1/4 cup icing sugar
  • 1 egg, lightly beaten
  • 1 tsp vanilla essence
  • 2 tsp wheat flour
  • 50 g ground almonds
  • 2 tbsp apricot jam, heated and puréed

Cooking method:

  1. Grind the flour, sugar, and butter in a food processor until crumbly. Add the yolk and almost all the water, stir until smooth. If necessary, add more water. Place on a floured work surface and knead the dough until smooth. Grease a rectangular baking dish with melted butter or vegetable oil. Roll out the dough so that it covers the bottom and sides of the pan, trim off the excess. Cover with cling film and place in the refrigerator for 20 minutes.
  2. Heat the oven to 180°C. Prepare the baking dish covered with baking paper, place the dough there and top it with an even layer of dry beans or rice. Bake for 10 minutes. Remove from the oven and remove the paper and beans. Place back in the oven for 10 minutes or until the dough is lightly browned. Leave to cool.
  3. Preparing the filling. Peel the pears, cut them in half lengthwise, and remove the core. Place in a small saucepan of boiling water and cook over moderate heat for 10 minutes or until tender. Dry, cool, and cut into thin slices.
  4. Beat butter and powdered sugar until fluffy. Gradually add the egg and essence and beat until smooth. Using a wooden spoon, stir in flour and almonds. Place on the baked dough. Cover with pear slices
  5. Bake for 20 minutes or until golden brown. Lubricate the not yet cooled pears with jam.
