These delicious minis are soft and tender. Egg-free recipe with whole grain flour is a healthy option for a snack in a lunch-box of your kids or as something sweet for a tea-time for all family.

Cottage cheese minis with raisins


Ingredients:

  • 1/3 cup whole grain wheat flour
  • 100 g cottage cheese
  • 1 tbsp brown sugar
  • A pinch of salt
  • 50 ml vegetable oil
  • 1 tsp baking powder
  • Vanilla sugar or essence
  • 2 tbsp raisins

For sprinkling:

  • 1 tbsp brown sugar
  • 1/4 tsp cinnamon

Cooking method:

  1. Pre-heat the oven to 180C. Lay the baking tray by a parchment paper.
  2. Mash the cottage cheese with a fork. Add flour, raisins, sugar, salt, baking powder and vanilla. Mix well by a spoon. Then pour in the vegetable oil and use the hands to bring the dough together in the bowl.
  3. In a flat plate mix sugar and cinnamon for sprinkling.
  4. Form the small balls and dip each ball from one side into the sprinkling. Put the cookies on the prepared baking tray and bake in the oven for about 10-15 minutes in the temperature 180C.
