Just before the Lent, it is the right time for PANCAKES! In my culture this time is called “Maslenitsa” – is an Eastern Slavic religious and folk holiday, celebrated during the last week before Great Lent, that is, the eighth week before Eastern Orthodox Pascha (Easter). Maslenitsa corresponds to the Western Christian Carnival, except that Orthodox Lent begins on a Monday instead of a Wednesday, and the Orthodox date of Easter can differ greatly from the Western Christian date. During the week of Maslenitsa, meat is already forbidden to Orthodox Christians, and it is the last week during which eggs, milk, cheese and other dairy products are permitted, leading to its name of “Cheese-fare week” or “Crepe week”. The most characteristic food of Maslenitsa is bliny – thin pancakes or crepes, made from the rich foods still allowed by the Orthodox tradition that week: butter, eggs and milk.

Following the tradition I have made some new recipe of pancakes while experimenting in my kitchen. The inspiration comes from Malaysian Roti Jala (means “net bread”), snack usially served with curry dishes.

Certainly you can find some special utensil to make them – a soldered tin cup looks like a cup with multiple outlets beneath. But I found my more sustainable way to use a plastic water bottle for this purpose: just make by knife three holes in a bottle cup and a special equipment is done!

Lace pancakes


Ingredients:

  • 1 large egg
  • 2 tsp agave syrup
  • salt
  • vanilla essence
  • 1 cup whole fat milk
  • 1/4 cup water
  • 1 tbsp vegetable oil
  • 1,5 cup flour (or to the consistency of thick cream)

Cooking method:

1.Whisk the egg with salt and syrup, add vanilla essence. Pour milk, water, vegetable oil. Pour the flour and knead the dough (to the consistency of thick cream).

2. Take a water bottle. Make 3 holes in the cup with a sharp knife. Pour the dough into the bottle. Pour the heated pan without oil from the bottle in the form of openwork patterns.

3. Roll up into rolls and serve with jam or maple syrup.
