Few words about food that can cool us a little in summer ☀️. In Chinese cuisine it named after #yin - #yinfood

Yin in this context means “cool and cold). In this group we can find such products like:

✅ Crabs, chicken, cucumbers, sesame, seaweed, water or stock, apples, oranges, mango, ice-cream, etc.

One week of YIN DISHES - salads and cold, simple foods - can make you feel need in #yang ones (warm & hot), like something spicy or fried. So the best way to stay healthy is to do #balanced choices.
That is why exactly I added some prawns 🍤 to my #yinlunch.

#MYLUNCH :

- grilled shrimps (marinated in smoked paprika, garlic, ginger, salt).
- salad leaves

And now officially we are in #summer ☀️. This year we had very nice weather really long time, what was unusual. We’ve spent a lot of time outdoors, enjoying many wonderful places in #uae.

Aaaaaannnnddddd now a very hot week is coming (which was announced in the social media already). Although a thermometer shows only +38C, however the temperature we feel is around +51C - so we are cooking slowly 🤣🤣🤣🤣

To survive somehow I drink a lot of water and eat food that represents #yinenergy (cool & cold).

Our #lunchidea for hot days:
- sushi rice with sushi seasoning
- tuna, avocado & spring onion
- #wakame salad
- shredded #nori seaweed
- drop of #kewpie mayo

Good morning, people! How are you?

Do you know that almost every cuisine has its own #recipe for #CHEESECAKE 🍰?

It can be done from cream cheese, cottage, quark cheese, with cream or without, with base or without, sweet or less sweet, baked or non-baked…

No matter where it is made it is always DELICIOUS 😍😍😍

I remember the cheese cake from my childhood - from cottage cheese (twaróg 🇵🇱, тварог🇧🇾, tvaroh 🇨🇿) and it is baked without base.
The easiest recipe in the world:
- 500 g cottage cheese
- 1-2 eggs
- 2 tbsp semolina (fine)
- 3 tbsp sugar
- salt
- vanilla
- sour cream for topping

Mix all together, layer sour cream on the top, and bake in a heat-proved dish greased with butter and sprinkled with breadcrumbs, in the oven in 190C until the sour cream is cracked.

Hi! Today my #breakfast was inspired by Mexican music we’ve listened in the morning ❤️

After dropping kids to school I’ve already knew what I will cook for myself. Certainly it should be #tortilla 🌮.

As I love experimenting, I bought few new ingredients and tested them. But in recipe you can use any substitute your are familiar with:
- I used Japanese #redbeans (Hosokawa Tokachi San Azuki), but it can be substitute by any type of small red beans
- instead of spread plain cheese Tarti’Bon (@carrefouruae) you can use Philadelphia cheese or your favorite #labneh
- #lorpeyniri cheese (Turkish cheese for #börek) very similar to soft cottage #cheese (#творог) or you can replace it by any soft white cheese.

#RECIPE:
- plain big tortilla (“El Sabor big wrap” original)
- spread plain cheese
- avocado slices 🥑

🌯Filling (fry altogether in a pan till hot and egg is cooked. Mix all well):
- cooked small red beans 🫘
- corn 🌽
- grilled bacon, cut into small pieces 🥓
- egg 🥚
- cottage or lor cheese
- #cilantro and spring onions
- chilli pepper, salt, red paprika 🌶
- drizzle of water

Spread cheese on the 1/2 of tortilla, add some avocado slices, top with the filling and drizzle with mayo. Cover by other half . VOILA!

🥩I rare cook #meat - my husband is the one who is responsible for this 😄. But today I’ve tried and it turns out into the DELICIOUS meal.

Salt, pepper and coffee rub - that is all I used. Grill it on my perfect kitchen helper #tefaloptigrillelite and voila!

#SOBANOODLES
Soba is a thin Japanese noodle made from buckwheat. The noodles are served either chilled with a dipping sauce, or hot in a noodle soup.

soba noodles are some of the healthiest options out there for carbohydrates. Unlike ramen noodles, which often contain oils, fat and salt, soba noodles calories (especially pure buckwheat) are very low in fat and cholesterol, provide healthy carbs and give you protein.

Our morning ritual is to have coffee ☕️ at our garden first (while it is not so hot 🌴) and then only to eat breakfast.

#RITUALS are really great thing when you want to control some flows in the life. It gives me a power for the whole day, feeling of stability, “my time” before kids wake up, uniting with the nature when listening morning birds songs… the list can be very long.

It is good time to talk with your loved ones, listen to the “morning music”, and simply calm down. Yes! It is important to give our body some time in the morning to wake up smoothly, without any stress!

This dish is a Winner on every occasion. Simply to make and delicious in taste 👌🏻

The main secret (as always) only fresh ingredients. In Dubai my favorite tomatoes are produced by local farm @pureharvestsmartfarms 🍅. They are so delicious that can be eaten without anything- pure taste 👍🏻

The #recipe is very easy:
- tomatoes cross cut
- crashed garlic
- fresh rosemary
- good olive oil
- salt & pepper

Fill the tomatoes with garlic, sprinkle with olive oil, season with salt & pepper and top with rosemary. Bake it in the oven for 20 minutes in 190c.

Enjoy!

🌀Are you the one who leaves the best part for the end? Or rather you prefer to enjoy everything what is the best right now?

⚜️Very long time back I thought that the only proper way to live is organizing and planning everything. I wore my perfectly fitted costume in dark corporate colors, I had in my wardrobe the outfits which were waited for the “perfect time”, and yes! I left the best bite for the end.

🌸But later, I’ve changed my way of thinking. I didn’t wait when somebody will help me - I transform my mind by myself! It was not easy and required more time than I expected. The result is that I live every day of my life without regrets, I wear colorful outfits in style I created myself and enjoy it without looking behind and worrying of what others will say. And yes, now I eat the best bites at the beginning!

Don’t wait for the perfect occasions, create them everyday!

I enjoy a lot simple breakfast, with not many ingredients, but still full of flavors.

One of my favorite combination is #tomatoes 🍅 and #mozzarella 👌🏻. Certainly the dish will taste only if the ingredients are fresh and carefully grown/made in sustainable environment.

Here in Dubai, our favorite tomatoes are grown by @pureharvestsmartfarms 👍🏻. They are sweet, juicy and with minimum acidity (just enough to taste divine!).

When the sun is shining even from the plate it gives the feeling that EVERYTHING WILL BE GOOD 🥳🌼🌻.

🥒 CUCUMBERS 🥒

All that water in #cucumbers can help keep you hydrated. Plus, the fiber boost they give you helps you stay regular and avoid constipation. The vitamin K helps blood clot and keep your bones healthy. Vitamin A has many jobs, like helping with vision, the immune system, and reproduction.

FRITTATA with chickpeas
(Portion for 2 adults)

- 4 eggs
- 1/4 onion
- 100 g canned chickpeas
- potato leftovers (I used baked potato from the previous day)
- bacon (optionally)
- mozzarella cheese
(First fry the onion, then add bacon, chickpeas and potato, pour the eggs and sprinkle with cheese. Cook with the covered lid for 5-7 minutes)

For serving:
- cherry tomatoes
- cucumbers
- arugula
- almond flakes
- olive oil
- black sesame

How many dishes could be done with simple #potato 🥔. Millions!

The truth is that generally we repeat the same ones we know very well and skip the new recipes as they’re seemed too difficult or too complicated.

I love discovering and generating new taste from the same ingredients. Inspired by many cuisines and many chefs, I don’t afraid of mixing the textures even if it seems strange 🤣🤣🤣.

So here is my new experiment, a funny #idea of serving #potatoes . The recipe is perfect as a snack or side dish ✌🏻.

In this recipe any type of potatoes could be used (purple, or sweet potatoes 🍠 as well).

POTATOES 🥔

Potatoes are a good source of fiber, which can help you lose weight by keeping you full longer. Fiber can help prevent heart disease by keeping cholesterol and blood sugar levels in check. Potatoes are also full of antioxidants that work to prevent diseases and vitamins that help your body function properly.

Crunchy RAMEN POTATO fritters

- 150 g potatoes
- 2 tsp potato starch
- salt

- 1/2 pack instant ramen noodles

- 1 tbsp flour
- 1 tbsp water
- vegetable oil for frying

1. Peel and cut potatoes in small cubes. Put them into a heat-proof dish, cover with food wrap. Microwave for 7 min at 600 W.
2. Add potato starch and salt into the bowl and mash well.
3. Shape the potato dough into long triangle (see on the pictures) and cut into small ones.
4. Mix water and flour in the separate bowl. Dip the triangles in it and coat with crushed ramen.
5. Fry in pre-heated oil for 3-4 min or until crispy.

Sunday is a #crepes day 🥞🍳

There are many ideas how and with what to eat crepes. They can be savory or sweet, served with jam or egg.

In basic #recipe of crepes dough you can easily change strong white flour to buckwheat, oat, brown rice or quinoa flour. Or mix them all together like I did today ☺️

Personally I prefer #savory option:
- crepes
- cheese
- maple bacon
- arugula
- cherry tomato
- feta cheese
- steamed egg
- black pepper.

What type of dinner meals do you prefer?
Me personally love #SALADS. First of all because

~ they don’t need a lot of time to be done,
~ they are full of nutrients
~ they are made of whole foods, which contain dozens of compounds with health benefits
~ they are very colorful 🌈 😁

And to activate all micronutrients that are hidden in the vegetables I add some olive oil and lemon juice:
✅ We need to eat #fat to absorb fat-soluble #vitamins. So put some olive oil, avocado 🥑, and nuts on your salad

✅ We need vitamin C 🍋 to best absorb #iron from leafy greens, so add some fresh-squeezed lemon to your #kale 🥬
