Modern sushi is very different from the original version proposed by the Japanese chef. Currently, the recipe presents various flavoring shades. However, the unique cooking technique that was invented by a chef from Japan is still considered the most advanced.


Types of Sushi


Maki Sushi or Norimaki

If sushi rolls are wrapped with a roasted seaweed sheet, which is usually the case, it is called Norimaki as seaweed is nori in Japanese.

  • Hosomaki

These are very thin rollers up to 3 cm in finished form, prepared from ½ sheet of nori and placed in 6 parts

  • Futomaki

Typical futomaki is 5 to 6 cm in diameter. They are often made with two, three, or more fillings that are chosen for their complementary tastes and colors.

  • Uramaki

These are inside-out rolls, where rice is on the outside of the roll, and nori is on the inside. This is an American innovation that’s never been very popular in Japan. Japanese maki are designed to be eaten by hand and sushi rice is too sticky to touch.


Nigiri

Hand-pressed sushi rice with a small amount of the wasabi and thin slice that cover the rice (Neta, means toppings), consisting of fresh fish or vegetables

A Few Tips:

  • When we make nigiri, we do it with one hand. Remember to wet your hand in Tezu, vinegared water, used for dampening the hands when making sushi.
  • Wasabi (Japanese horseradish) spread on a rice under the fish slice.

Gunkan

Refers to an oval, ship-like sushi roll, comprising a nori seaweed sheet wrapped around a ball of rice with space left at the very top for dressing. The popular toppings are flying fish, salmon or sea urchin roe.

 


Tamago Sushi

This is a Japanese omelet, tied with a strip of nori on a base of sushi rice.

Tamago literally means “grilled egg”, and tamagoyaki is a Japanese omelet. The batter made for the tamago contains a small amount of mirin and sugar. Both of them, when mixed with eggs, give a very mild sweet taste to the roll. This sweetness is the essence of a good Japanese omelet roll.


Unagi Nigiri

This is a type of nigiri with freshwater eel. This type of sushi is one of the most popular varieties of Japanese sushi.

 

 


Temari Sushi

This is a rice ball, covered with a thin layer of any topping like meat, pickled vegetables, avocado, cucumber. It is most convenient to wrap it using a cling film. Top can be sprinkled with sesame seeds or seasonings for rice.

 


Onigiri

This is a dish of sushi rice, blind in the form of a ball or a triangle. They can be with or without filling. It can be unevenly mixed rice, and sometimes instead of nori lettuce, scrambled eggs and even sliced ​​ham are used.
