You know that one dish doesn’t always mean one recipe. Moreover it means that there are many recipes of one dish. Gado-gado is good example of this rule. Nevertheless there are still few basic ingredients that just should be in it: chili, sweetcorn, green beans and cucumber. It comes from Indonesian cuisine and literally means “mix mix”. This very tasty dish is a combination of both cooked and uncooked ingredients what makes it so special. Worth to try!

Ingredients:

  • 4 cooked potatoes
  • 4 hard-boiled eggs
  • 2 cucumbers
  • 2 carrots
  • 350 g green beans, trimmed
  • 3-4 tbsp sweetcorn
  • Handful of coriander, chopped
  • 1 tbsp spring onion, chopped

Sauce:

  • 3-4 tbsp organic peanut butter (with only two ingredients: peanuts and salt)
  • 3 garlic cloves
  • 2 tsp brown sugar
  • Juice from 1/2 lemon
  • Salt and pepper
  • Red chili flakes
  • Water

Cooking method:

  1. Cook the potatoes in the pan of boiling salted water for about 25 min or until just beginning to soften. Drain and set aside to cool, then cut and place in a large serving bowl.
  2. Meanwhile hard boil eggs, clean from the shell and cut in quarters.
  3. Cook green beans in a salted water for about 7 minutes, drain them and put in a few seconds to icy water to stop cooking process.
  4. Chop cucumbers into bite-sized pieces. Slice carrots finely.
  5. Add green beans, sweetcorn, cucumbers and carrots to the salad bowl with potatoes.
  6. For sauce: mix organic peanut butter, pressed garlic, chili flakes, lemon juice, sugar, salt and pepper. Add a little water for smooth consistency (not too runny).
  7. Pour the sauce over the salad and toss together. Serve with hard-boiled eggs, chopped coriander and spring onions.
