Every nation has at least one product, which is almost mandatory in the cuisine. For Ukrainians it is pork belly (“salo”), for Russians – bread, for Mexicans – corn, for Italians – pasta, for Indians – rice and for Belorussians – a potato!

Bulba is a head of everything”. Grilled, steamed, boiled in their jackets and without, stewed, baked, as a garnish and as a separate dish, in soups and desserts. Yes, do not be surprised, from potato it is also possible to prepare cakes, pies, puddings, donuts and cookies.

Today, I am pleased to share my simple recipe for biscuits made from potatoes.


Cookies potatoes


Ingredients:

  • 10 medium-sized potatoes (for boiling)
  • 2 eggs
  • 1-2 tbsp ghee
  • 2 tbsp walnuts, ground
  • Grated nutmeg
  • Salt, ground black pepper

Instructions:

  1. Peel the potatoes, boil, cool and clean.
  2. Beat the egg yolks, add the melted ghee, half walnuts, salt, spices, stir and mix with a puree.
  3. Whip the egg whites to a foam and carefully (in part) add into the potatoes.
  4. Using a pastry bag or spoon put the potato dough on a greased baking tray. Sprinkle with remaining nuts.
  5. Bake until golden brown at a temperature of 150 C.
